I Found My Bread for Life

So, I'm gluten-free (love!).  But I generally don't eat a lot of products that are just replacements for bread, cookies, pancakes, pizza dough, etc. (don't love!)  There are a few exceptions that are good, but mostly I don't eat starchy, gluten-free bread products...they aren't healthy & spike your blood sugar...and I don't like eating things with unrecognizable ingredients.

But then.... I saw this recipe for Paleo Bread by Elana's Pantry (I first saw the recipe when GOOP featured it here.)  The ingredients sounded so healthy:  Almond flour, coconut flour, flax seed meal, coconut oil, eggs, honey, baking soda, celtic sea salt, apple cider vinegar.  Ok, this is my kind of ingredients list.  Danny was suspicious as I just bought my very expensive almond flour and coconut flour.  But then the almondy, coconutty bread smelled sooo tasty while cooking.  We've been so happy eating thin slices of this very moist, delicious bread in the last 24 hours that it's almost gone.  (I can tell you that it's amazing with pastrami.)  This bread will definitely be a new regular at the Kofoeds.  (I just ordered myself a bulk 5 lb bag of almond flour here and can't wait to try out more of Elana's almond flour recipes.)  Can you tell how excited I am?  This bread really made my week.  I still can't believe the smell of bread will actually get to reside in this house.

  1. I enjoy your blog. My life is so very different from yours, yet I find many things we both love and enjoy.

    I had to laugh when I read todays posting where you wrote the words "bulk 5 lb bag" together in a sentence. For my household--7 people when it is quiet, 12 people this summer, and 17 during the holidays--a 5 lb bag is considered a small bag. It takes 25 to 50 lbs to rate the title BULK.

    My zucchini plants are producing BULK this summer. I have to bake 4 loaves of zucchini bread every few days for this crowd.

    1. Carini - your comment made me laugh. So true that our lives are different. I can't imagine buying 25-50 lbs of flour. I would have no place to put it. :) This is the opposite of my sister in law with a family of 9. She has a basement full of flour and staples. It really is hard to imagine. :)

  3. Yum, I definitely need to try this!! My boyfriend was skeptical when I first started buying "fancy" ingredients too- but now that he eats cleaner (and started a great work out routine!) he notices more how different foods make him feel and is totally receptive to our pantry of whole, natural (slightly more expensive) ingredients. We both win!

  5. Mara, have you heard of vitacost.com? They sell health food at very discounted prices. I have yet to order from them, but have heard very good things. I think I may have to order these flours and bake some of this bread. It looks delicious and buying store bought gluten free bread can be so expensive!

  6. As I read this, I am enjoying the smell of my very first gluten-free cake, baking in the oven! It sounds a lot like your bread- almond flour, coconut oil, honey... plus raspberries! I can't wait to try it :)

  7. My husband has celiac disease, and I've been told by others with it that one can grind your own almonds In a cheap coffee grinder (purchased mine at Walmart). It saves a bundle!

  8. Oh how I love Elana's Pantry. Her almond butter brownies! At one point I realized I was eating almond bread with almond butter and eating almond butter brownies and drinking almond milk ... I have since scaled back!

    Anyway, thanks for the reminder on this bread--I've been wanting to make it again. I've been eating Food for Life's Millet bread lately but it's a bit starchy (though miles better than the tapioca or potato starch-based breads) and almond bread is more balancing/grounding for me. Delicious!
