Love Story & Buttermilk Pancakes


(Here is the continuation of the first emails Danny & I exchanged in the three weeks before we met.  To read the whole collection of the "Love Story" emails, click here.)

Oh, so glad that you have had people watching out for you.  If I could just retire and help people all day long, I would.  Having people reach out to me just meant the world and I am always trying to pass on that favor.

And, oh my...you could come to NY?  Um, that would be so cool!  :)  It would be so great to just meet and talk and share all this.  And if you make me melt, as you are already, it will be a good thing that you live in Boston.  ha!
And, as for dating.... well, it sounds glamorous and fun.  And yes, I have had some fun.  But, nothing compares to being married.  By the way, glad to see that you care so much about your calling.  You are scoring HUGE points, Mr. Kofoed (how on EARTH do you say your last name??  haha.  :)  Seriously, there is nothing more attractive to me than a guy who is honorable and makes it a priority to serve. LOVE IT.  That is one thing that has been hard about being single....as you know, you grow up a lot when you get married.  All the married guys out here are raising children, bishops of wards, serving their families, progressing in life... I loove it allll.  But, some of the single guys seem to just be "hanging out" and going to parties.  They will no doubt progress a ton & redirect their priorities when they get married, but at the moment, their state of life is not doing it for me.  Anyway, I actually find it attractive that you have been married!! :) :)

And pancakes?  Are you kidding?  A man that can cook - even if it's one meal - is a dream.  I will gladly butter up some buttermilk pancakes with you when you come.  So fun.  :)  And I'll make sure to clear out some of these garment racks of HARVEY clothes & boxes in my living room & kitchen.  It looks like a shipping yard in here!
 
Oh man, you are so dang cute and charming.  I love it that you are checking your email.  Oh my, me, too!  Always excited to see an email from you.  It will be fun to see what kind of connection we might have in person.  But you know what, I don't even care.  Sure, it would be a dream come true to meet someone wonderful - - to be on the same page with someone.  I dream of that!!!  But I also just love, love, love this new little friendship that we have.  I so appreciate your goodness.  It's so refreshing to converse with someone that gets my world right now!    

Alright, better get back to work !  :)  I'm a night owl these days.....

So it only took me about 2 seconds to hear the buzz of my phone and rush to see if it was an email from you :)  No snickering too loud, your interns may hear you.  :)

Last name is pronounced Co-fed.  It's Danish, if I remember correctly it means cow foot - isn't that sexy.  However, apparently Kofoed in Denmark is kind of like Johnson.

So, when your interns are there, do you make sure to have a serious look on your face when you are "working hard" writing an email?  You know, you slightly furrow the eyebrows, get this intense stare going on with the screen like you're really trying to focus.  Tap on the keys furiously.  THIS IS IMPORTANT!  haha!

Thank you for complementing me on my service...though I'll have to admit that my service is somewhat selfish.  This calling has been great because it gives me an excuse to get out and forget about me for a while, and do what I love...teach.  It's the best calling there is.  That, and I have access to people like Clayton Christensen!  He's the man!!!  Do you realize how lucky I am?  Every time I meet with him I walk away thinking "I want to be just like him". 

As for cooking, I'm very passionate when it comes to food...you should have seen how excited I got about going to Giacomo's (my favorite restaurant in Boston) last weekend and how I was able to describe what each dish was like before we even got in the restaurant.  I think I missed my calling in life and should have been either a chef or a food critic.  Good food excites me, which is why I'm always excited to try a new recipe.  The only thing better than really good food is really good food that you made yourself.  It's so satisfying! 

And yes, the emails are great, but you're right - even if the same type of chemistry isn't there in person, the best part about this has been a reminder that there are really good people out there who seem to share my outlook on life and what it takes to be happy, both personally and in a family.  And that little bit of knowledge confirmed makes it all worth it. 

Alright, time to continue "preparing" to go to bed (each night I try to tell myself I'll climb into be before midnight.)

Just heading to bed. Late night with my interns + then finishing up some work.

But let me just say that I love Clayton Christensen and I love food snobs and I love it that you are not a crazy night owl like me!  I can't lie - I need a man to give me a reason to get to bed on time!!!! :) :)

Hopefully you're sleeping soundly and the buzz of your phone will not wake you.

And since I hope you get this in the morning, I'll say... good morning to you, dear Danny!

  1. I saw your email announcement about your blog and I was like, "ok, cool. I'll check it out. I bet by now they've done like 3 or 4 posts."

    And look how super wrong I was. I get like five posts a month and I'm like, "I'm tearing it up!"

    These letters are mega. I'll have to shoot you a link to some of Val's assessments of our early dating. She has a way better blog than me. Because she's radder than me. Which is a word. Don't spellcheck me, Blogger.

  5. I was forwarded a link to this blog when someone asked if I was related to the Kofoed's of this blog. While we've never met, I'm sure we're related some how. Aren't too many Kofoed's that I know of, at least ones that didn't drop the second O or change the E to a R. Thanks for representing it the way it should be. Nice to see you're using the same 3 tricks I've always used when explaining my last name. 1) Co-fed. 2)it does mean cow's foot. 3) it is super common in Denmark.

    Congrats on what looks like a very well put together and popular blog and a great relationship/marriage. You're making Kofoed's everywhere proud.
